Maestro of the dinner rush, Joe Pagliuca conducts the kitchen staff at
Pagliuca’s, a family restaurant run by Joe, his two brothers, and his
parents—all of whom emigrated from Italy in 1975. Today
Pagliuca’s packs in mostly regulars who come for the home-style food.
“Italians
enjoy good food,” says Joe. “A nice glass of wine, bread on the table, and
a nice dish of pasta first. If there’s no pasta, we’re not happy. Without
pasta, it’s not a meal.”
