Maestro of the dinner rush, Joe Pagliuca conducts the kitchen staff at
Pagliucas, a family restaurant run by Joe, his two brothers, and his
parentsall of whom emigrated from Italy in 1975. Today
Pagliucas packs in mostly regulars who come for the home-style food.
Italians
enjoy good food, says Joe. A nice glass of wine, bread on the table, and
a nice dish of pasta first. If theres no pasta, were not happy. Without
pasta, its not a meal.
