The Secrets in the Sauce Photograph by William Albert Allard |

A family cellar doubles as a sauce factory each August when cousins Maria
Gasbarro (left) and Adriana Susi turn 30 bushels of tomatoes into 400 jars
of sauce flavored with garlic, onions, and parsley. Most Italians in the
North End dont make their own pasta sauce anymore, Gasbarro says. But
these two traditionalists have been canning tomato sauce together in
Susis cellar every summer since they came from Abruzzo, Italy, almost 40
years ago. Canning makes good memories, says Susi. You talk, you laugh,
and then you cry because its so hot!
