Vendor P. Manoharan has five days maximum to sell his armful of mahaseer, a prized game fish sold at a market in Bangalore, India. His safety measures consist of washing the fish and keeping it cold. Buyers should trust their eyes and noses. Look for fish with clear eyes and firm, shiny flesh. A pronounced fishy or ammonia-like smell means the fish is no longer fresh.
