The Unofficial "Official" Sandwich of the Strip

Along the 22 blocks of gastronomical heaven that form Pittsburgh's Strip district, Primanti's traditional sandwichborn in the 1930ssells big. The secret? Take two thick slices of Italian bread. Top with choice of meat and melted cheese. Add an egg, maybe. Pile on vinegary coleslaw, freshly cut fries, and a few tomato slices, then serve on wax paper. "It's all by the handful literally," says photographer David McLain. "They stick a bare hand into a basket of fries and scoop it up. Then they stick a hand into a vat of coleslaw and slap it on. It's a total hands-on experience."
