Holding On to the Past

The regulars arrive on foot by car, but Pennsylvania Macaroni Co.'s caciocavallo cheese is still made to carry on horseback—covered in wax and string-tied in a style dating back to the 14th century. The ethnic market's Old World ways have changed little since three Sicilian immigrants opened the shop in 1902.
