Full of Beans

Inside the Appalachian Early Child Development Center in Whitesburg, Kentucky, a picket fence keeps kids safely away from the street-side window, while sunlight brings an "outdoorsy" feeling indoors, says Bonita Adams, the center's co-founder. On weekdays, kids at the center do everything from quilt making to rug braiding to cooking . . . shucky beans? "You string green beans, hang them in the window to dry, then cook 'em," Bonita explains. "Parents work, and grandparents work, so who else is going to pass along these traditions?"
