In his hotel room in Chile, Børge Ousland organizes food for the journey ahead. Each bag represents an individual meal: porridge for breakfast; a mix of fruit, oatmeal, nuts, and sugar for lunch; dried reindeer heart for snacks; and meat, mashed potatoes, and butter for dinner. Before leaving home, Ousland cooks and freeze-dries all meals according to a strict diet plan. Dinner adds up to 1,700 calories for each person, enough to restore strength after a strenuous day. The kayak sleds, at right, will soon be packed with food and equipment and then pulled across the ice by the travelers.
