Keeping Kosher
Photograph by Carolyn Drake

Dressed in their best, the Erlenwein family dine on a four-course meal on the eve of Yom Kippur. Hasidic Jews observe kosher dietary laws, which require separating meat and dairy and the utensils that touch them; eating only "beasts of the earth" if they have cloven hooves, chew their cud, and have been kosher-certified; and only consuming grape products made by Jews. Such guidelines often prevent Postville's Hasidim from eating at non-Jewish neighbors' homes.
