A trained rabbi inspects poultry at Postville's AgriProcessors meatpacking plant to give it a kosher seal of approval. Kosher certification requires a trained rabbi (called a shohet) to slice an animal's throat with a perfectly sharp knife. The animal must then be rapidly and completely drained of all blood and inspected for diseases and lesions. Orthodox Jews have followed kosher dietary guidelines listed in the Torah for over 3,000 years.
