Cajun spice adds a finishing touch to each turducken—a turkey stuffed with a duck stuffed with a chicken—at Hebert's Specialty Meats in Maurice, Louisiana. Owners Junior and Sammy Hebert claim to have started making the dish in 1985 when a local man brought his own birds to their shop and asked the brothers to create the medley. Since then, it has become something of a national fad. Hebert's alone sells 3,000 turduckens between Thanksgiving and Christmas—for $55 a pop.
