Wading through his family's pond, Christopher Villien, 18, checks one of 200 traps on a routine hunt for crawfish—also called crayfish, crawdads, or mudbugs—a favorite food in Maurice. He sells his catch to his grandparents' restaurant, Soop's, where the crustaceans flavor étoufée and crawfish bisque.
