The Perfect Food

Chiyo Miyagi, age 73, spends hours each day in a small kitchen making tofu she sells to local villagers. Tofu is an almost uniquely perfect food: low in calories, high in protein, rich in minerals, devoid of cholesterol, and rich with essential amino acids.
