Nothing tells you the story/history of a place like its food, and the Touaregs will bake it for you right in the earth with beaming pride. The dough is then cleaned off, broken up, and used as a thickener in lamb stew - a delight on a cold night in the desert and good fuel for the next day's journey.

Location: The Hoggar Mountains, Southern Algeria
